Reminiscent of the days when cowboys drove the cattle up the trail and were fed by their cantankerous ole cowboy chef they called "Coosie," "Cookie," and many other colorful names, the food is prepared in Dutch ovens, the product of latter day "coceneros" and is far superior to what the cowboy's would have experienced during their months on the trail.

Cooking your meal the way it was done
a hundred years ago out on the trail.

CCChuckwagon

If you are looking to impress your clients, friends, or whomever you are having for your "get together", you might consider having us do the catering. We will bring our authentic chuck wagon and dress in period clothing, and more especially we will be cooking your meal the way it was done a hundred years ago out on the trail. We can do the job just about anywhere we can build a fire and even if a fire isn't allowed we can bring the food already prepared. You can have it anyway you like, and we will make it reminiscent of the days when cowboys drove the cattle up the trail and were fed by their cantankerous ole cowboy chef they called coosie, cookie, and many other colorful names. Although the food is prepared in Dutch ovens, the product of latter day "coceneros" is far superior to what the cowboy's would have experienced during their months on the trail.

We (Wayne Calk & Skip Clark) use the chuck wagon for competition cooking, catering, and as a period display. We have competed in numerous cook offs in Arizona, New Mexico and Texas and have catered for many different occasions such as: backyard parties, wedding receptions, family reunions, wine festivals, grand openings, hotel functions, rodeo functions, company gatherings, trail rides, hunting camps. desert parties, Iraqi Freedom returnees, movie stars, fund raisers, and political events. We will be happy to customize a meal just to suit your needs.
